If the idea of clean, healthy eating doesn’t motivate you, I know how you feel. Sometimes when you focus on eating healthily it seems like a chore. I think it’s because many of us have a tendency to cut out everything we enjoy eating and substitute it for food we perceive to be healthy. Healthy for me is not about exclusion, it’s about eating real food, organic and unprocessed.
If you’re thinking about making some dietary changes for health or well being, avoid focussing on what you can’t eat start to think about what you can eat. This one realisation opened up my eyes when I started a vegan diet at the start of 2014.
However, as this isn’t a post about healthy eating I’ll move on to the best bit… The recipe! It’s one of my favourites. It’s vegan, high in protein and healthy. But, over and above that — it’s super delicious and extremely satisfying. Of course I’m going to be a bit biased because it’s my wife’s recipe!
